Organic Beluga Lentils are grown right here in eastern Montana and sold by Timeless Food Company, Ulm MT. This recipe can be adjusted to your needs and taste preferences. However you make this salad, you will reap the countless health benefits of the main star ingredient - Lentils! These tiny powerhouses originate from the legume family. They are commonly used as a meat alternative since they hold over 25% protein, as well as a dense array of nutrients such as B Vitamins, Magnesium, and Zinc! They're also a great source of Iron, and when combined with healthy fats like in the following recipe, they're wonderful fuel for your mind and great, healthy food for your skin!
We like this salad with buttered whole grain or Pumpernickel bread. You can also enjoy it with other vegetables for a salad, or just as a highly nutritious side dish with your dinner! No matter how you serve it, this salad is delicious just as much as it is nutritious!
Start off with:
- 2 Cups of Montana Organic Beluga Lentils (Yes, these lentils are black and look somewhat like caviar.)
- 4 cups of hot water
Boil your lentils for 12-17 minutes - they should ideally come to an al dente” or chewy state, adjust to your preference!. After lentils are fully cooked to your liking, drain the remaining water.
Now for the rest of the ingredients!
- 4 Tbs. of Balsamic Vinegar
- 6 Tbs. of Apple Cider Vinegar
- 3 Tbs. of Organic Olive oil
- 1 Tsp. Kosher salt (use less if using regular salt)
- 1 Tsp. fresh ground Black Pepper
- Half of a Red Onion, finely minced
-1 to 2 Tbs. of dried Summer Savory to taste you can also use Thyme or Marjoram, season accordingly.
Add in all remaining ingredients and spices one by one, mixing as you add.
Mix these all together thoroughly, cover and allow to cool in the fridge overnight.
